Zucchini as a Sleep Aid...?

I know, I know, it sounds insane. Zucchini helping you to sleep, but...let me just run some facts that we have about zucchini, it's vitamin content and how that may very well help you sleep a little better at night.


Zucchini is also a good source of vitamin B-6, or pyridoxine. This vitamin plays an important role in breaking down sugar in the blood (remember that your blood sugar increases after you eat), this keeps your blood sugar from getting too high. Vitamin B-6 can also have an effect on your mood! It is involved in the production of brain chemicals like serotonin, which affects mood, and melatonin, which helps regulate your sleep cycle. Eating zucchini is good for you in more ways than you can imagine!


I personally love zucchini and not only that, but I have a great recipe that I would love to share with you. Do you like pizza? (I know, why am I even asking, of course you love pizza, we all love pizza!) But, what if we could tweak pizza a bit, still get the same delicious flavor profile we love, but also give our body more nutrients, vitamin B-6 to be exact. And of course we will keep the meal balanced so that we are able to get good fiber, protein, some fat, and healthy complex carbs provided by the zucchini. It sounds like an overall win to me, how about you. See the recipe below!


Ingredients

  • ▢2 large zucchini

  • ▢½ cup low carb pizza or tomato sauce (I like "Simply Ragu")

  • ▢1 teaspoon oregano

  • ▢2 cups low fat or skim shredded cheese

  • ▢¼ cup parmesan cheese

  • ▢Turkey Pepperoni or Deli Turkey

  • ▢Low-Fat Cottage Cheese





Instructions

  • Preheat oven to 450°F. Line a baking pan with foil and set aside.

  • Slice Zucchini ¼" thick and arrange on prepared baking sheet.

  • Top zucchini slices with pizza sauce, then 1 TBSP Cottage Cheese, oregano, Shredded Cheese and your favorite pizza toppings (pepperoni, onion, mushroom, bell pepper, anchovies)

  • Bake 5 min or until zucchini is tender. Broil 5 min or until cheese is bubbly and melted.
